I'd still go with only adding the yolk in. Especially since it's boiled, the yolks in boiled eggs are really great. Crack two eggs per plate instead and only add the yolk. (Don't follow my suggestions.)
But maybe I'm the only one who hates egg whites that much.

Fish and boiled eggs? I'm sorry, but to me that sounds really messed up and like it would make me puke. I'm picturing cracking eggs over a fish in my head. That's just not right. (It's different than that, I know, but you're still having fish with eggs.)
It's probably because I see fish as a solely standalone food, I've almost never had it with other things, besides shoo-ins like rice and bread, so, I suppose I wouldn't know if it meshes well with anything more. Sushi is a thing, I guess. What does fish go well with? I'll take your word for it.
Anyhow, it still just comes off weird to me from figuring. Can you imagine how it'd feel to have ice cream and a caramel filled chocolate bar at the same time? That's how eggs and fish sound to me. That's probably a really bad analogy.
But that doesn't mean anything, because I'm really sensitive with food and know next to nothing. It's probably pretty good. I know for a fact that bread and fish go together really well.
