I know what you mean. Here's the trick: You stack 10 phyllo sheets on top of each other (brushing butter and olive oil in between em) and you put the filling on top of them in one go, then you stack 10 more.
That way the sheets bake nicely and they stay crispy.
One time I didn't want to bother with putting filling in between every sheet and made it that way and it turned out better, the texture is way way nicer.
Look at how they puff up in picrel and made a barrier to the filling. Also don't put too much filling, a moderate amount goes a long way, at least that's how I prefer it.
