Haibane Renmei definitely has Moe vibes, but the story is more profound than cute girls doing cute things. It's a drama, not a comedy even though it has funny moments. It can definitely feel slow-paced but that's because it isn't an action series, it's about a girl trying to navigate the rules of a strange new world.
Mushi-shi has the same vibe. Ginko understands how the Mushi work and that they aren't evil. Sometimes it's more about teaching than it was about solving problems. Some people tried to use the Mushi for their benefit without realizing the consequences. Slow paced, but very profound.
