There's plenty of hunting, plenty of fishing, plenty of camping, lots of rivers for rafting, kayaking, riverboat casinos, etc. There are mountains in East Tennessee for skiing and snowboarding. Or you can go all-in and make the 8-hour drive to Florida and the beaches.
