In the OoT Manga, Sheik acts a bit different from OoT game Sheik. She is a bit more blunt and less articulate than normal. As it turns out, in the manga, they change her backstory a bit. Instead of being seven years on the run, she actually started serving Ganon. Although, this ended up being a trick to get Ganon to trust her. You see, Ganon doesn't trust anybody, even his minions. But he is actually shown to have trusted Sheik. She fooled him. That's the triforce of wisdom at work here. More (noncanon) proof that she was a new soul.
But what (noncanonically) really confirms my theory is that, in the manga, Impa helped seal Zelda away so Sheik could exist and inhabit her body. (I will always argue that this is the case without needing to rely on the manga though.)
So essentially, this Sheik had an entire different seven years than the OoT game Sheik had. Making her different.
This next game is a pretty big difference however.
In Hyrule Warriors (HW), Sheik is summoned by a completely different Zelda. This Zelda is not the same as the Zelda in OoT. She is not only older, but I'm sure you are aware that Zelda is a different person in most games. This is no exception. So this Zelda's memories and personality no doubt would change Sheik. Sheik noticeably uses less prose and has more confidence.
This could be for two reasons. Sheik EITHER doesn't remember anything from OoT or she does, and her confidence displayed at the end is being showed here. If she doesn't remember anything, she would be very different. She would not have been affected by those seven long and traumatic years, plus she would never have been influenced by OoT Zelda. Thus, this Sheik is different. If she does remember, then she is still going to receive new memories and have another personality affecting her. Thus, this Sheik is different.
