You're only saving like 500 grams going 105 over claris
the smaller gaps between gears or wider range is helpful but not the end of the world
the ergonomics aren't much better
better braking helps but claris is still good
the shift feel and speed is still good
A new claris or sora bike, well fitted, with a carbon fork, nice tyres, and clipless pedals, is the absolute zenith of value, the point of hugely diminishing returns, perfectly adequate for any road rider, and superior to any road bike over 15 years old.
