I would say it is doable for 3 seasons, winter might be too hard (depending on the area) unless you set a good winter tent with stove, pic related.
Using a bike could also ease the time spend getting in and out of the woods as well as moving around the city. Assuming you don't have a car. So, you could bike through a path until its far enough from town, and from there just carry your bike into the woods half a mile or so to your preferred spot.
A day could look like such:
6.00 - 7.00 Wake Up, breakfast and pack everything into your pack or bike.
7.00 - 8.00 Bike / Hike to the town
8.30 - 16.30 Work (8h for example)
17.00 - 18.00 Gym + Shower
18.00 - 19.00 Groceries, wash clothes, etc
19.00 - 20.00 Hike / Bike to camp
20.00 Set camp, Dinner, rest
22.00 Go to bed
Additionally if the same spot is going to be used for few days you can bury or hang from the trees your food in an adequate container.
A gas stove to cook your food would be useful to not make a fire that could give away your location. Though won't provide you warmth and the food you can cook is limited. Can also try to make a mini hobo stove to cook with fire.
Investing in a good tent (dark green colours) and sleeping bag as they are the most important items for your comfort.
