if i were to use wood i'd go with treated wood with a non-toxic liner on the inside to prevent the chrome and arsenic from leaching into your bed's soil.

you should also water the pot as most of the root system will probably be there.
personally i'd just buy a really big and cheap plastic pot for each plant.
if your growing season extends into autumn and you make sure of the above you can probably get away with two main stems on each, but make sure you have a good trellis. that stick wont be enough support unless it's in the ground or is tied to something above.
