IF you want to live like a medieval person, that means bowhunting and other illegal things (illegal traps, etc) then it is illegal. Same with a hunter gatherer lifestyle. In general, if you don't make much hassle and keep to yourself and stay reclusive, the police would have no reason to check on you and you could probably live like that to the end of your days. In any western country it is illegal to live by yourself off the land primitively, so you just have to break the law.
Skills needed are woodworking, farming, hunting, gathering, long term food storage, firearms use and maintenance, etc.
How you can get started? You need to know the skills first. Buy some land, make a simple shelter like a wikkiup, plant some crops, make fences and space for livestock, hunt and gather, etc. I Imagine land would cost the most, then livestock and tools, etc. You need an axe, saws, knife, sharpening stones, bow/air rifle/gun, books on how to forage, clothing, ammunition, lots of rope and string, etc. It wouldn't really cost that much though.
I know a relative who lives in a roundhouse in wales and live sustainably, grows his own food, hunts and has livestock, chops his own firewood. You need money to get started but it isn't that hard.
