The reason why is that you shoot the turkey in the head and you can shoot them up to distances of 40 yards (though you can get a 50 yard shot), so you want a very large and very dense pattern with a full or extra full choke. In fact, using a 12gauge 3 1/2" turkey load is getting pretty close to the shot weight of a 10 gauge shot weight. It's fine if your shotgun can't take 3 1/2", just get some Remington Nitro 3" turkey load. Important thing is your choke is tight and you know your pattern.

Also you don't want the bolt to go straight through the body with a really high poundage crossbow or bow -- you want the arrow or bolt to stop
