If we're talking lenses I'd suggest either getting a 35mm prime or just a regular 18-55mm kit lens to offer up some f/stops and sharpness in favor of having some zoom versatility.
Working with 50mm(35mm lens on APS-C) is a really good way to learn photography whereas the 18-55mm will be more of a tool but do worse indoors and in low light.
I'm kinda partial to nikon myself because I use nikon and I really like af-d lenses but canon has the same amounts of options there for you, might even be better depending on what you're after, I might be wrong but pretty sure canon has a few primes with stabilization in it which is really useful for handheld low light as much as people don't want you to think that.
I think generally a really nice thing with nikon and canon is that there's so much cheap but good glass available if you're willing to spend effort into looking for it.

Does your diopter control not allow you to get perfect viewfinder sharpness?
If you're worried about the LCD screen get one of those adjustable liveview loupes, that should help with bad eyes without the need of glasses or contacts.
