DSLR read noise can be found on photons-to-photos, choose the lowest ISO with a read noise of ~1e. Dedicated cameras have gain and a low-noise gain setting stated in the manual - just use that. Also, don't forget to put your offset at 50-100 channels to prevent dark clipping.
