I hear the Castile-La Mancha (area enclosed by blobs of mountain climate that the city of Salamanca is in) tends to get fairly cold, and I can personally attest to Teruel (area between the cities of Zaragoza and Valencia) getting quite cold too, colder than non-mountain Huesca (area north of Zaragoza, hugging the pyrenees), so those tend to see snow actually setting in a bit more often than other continental areas, rather than melting on the spot
