Look at maps in the real games there are plenty that can be boiled down to walk in a straight line or make slight turns to avoid trainers.
There are dozens of ways to entice a player into exploring various other areas of the map, and methods that are used very often within the standard games. Make the player pick between taking the grassy path or the straight path by placing trainers to block off the straight paths. Place items or people to talk to in the various places that aren't necessary to traverse. Have unique spawn zones for various pokemon, such as having certain species only spawn in certain patches of grass instead of just anywhere on the route.
