The Latias isn't apart of this though, but I added her as an example. She did fine as a substitute to Latios but it definitely felt wildly different without max IVs (I couldn't max her EVs out bc she'd gain a level and then be ineligible for the lv50 ribbon), so I think I can confidently say that IVs and especially EVs matter a LOT, but in a pinch you can make do with only 2 perfect IVs.
That said, the general idea that you want to keep in mind when you play BT is to minimize bad rng as much as possible. This is true for Gen 4 BT as well, with popular sets revolving around Trick Uxie + Battle Armor, Acupressure Drapion. The AI loves to set up Double Team and abuse Bright Powder and prolong the battle as much as it can to wear you down, which is what makes Lum Berry for your lead invaluable. This team has seen me a lot of consecutive success because of this. Setting up is tricky unless your core is strong, but I think it is equally viable just attempting to muscle through it, which is why I hardly bring Milotic unless it's Doubles and can afford to bring it, as it tends to serve as set up fodder too much to make up for the bulk swap in it offers over full offense. I could never figure out a good enough item for Milotic either, since Metagross enjoys Leftovers too much, and cannot run Band as it is on Slaking.
I will say though, BT will likely give you the most trouble out of all of them, so there's always a silver lining to putting up with the bullshit that is BT.
