The bigger she gets the more she'd enjoy pancaking entire provinces, she might even challenge herself to see if she could crater an entire continent in a single day. By the time people got word that she was approaching she'd be upon them in minutes. I'd estimate it only taking a month for her to flatten out all traces of mankind's existence. The only hope of humanity would be for her transformation to end or for the pokegirl to have enough patience to allow them to begin rebuilding society in the cracks of one of the countless giga butt-cheek canyons she's filled the world with, they'd survive at least until their town merited playing with.
