the biggest difference is to Kanto Ash obviously
honestly I ve always felt the biggest change from OS wasnt so much his personality, but that May and Dawn were generally far less short-tempered than Misty, so the bitching of Ash x main pokegirl went down (not dissapeared, but down)
but that was because of lack of Misty, not because Ash became different
