Rejuvenation and Reborn are my two favorites. No fakemon, but every official mon up to Ultra Sun, and the battle system completely redoes terrain to be super complex and strategic. Tons of content, including side quests, and an interesting modernized setting, like Michigan in the Pokémon world. They're hard as fuck though.
Infinite Fusion is Kanto but you can fuse mons together. Fun game with tons to do.
Other than that I usually just browse Poké Community and try whatever looks interesting.
