Ash's Pikachu was always oddly strong, it's part of the reason Jessie James and Meowth ditched their real job to go after it. It's stated to be a deviant of its kind (at least that's what I remember)

Hes too retarded to understand type matchups and IV spreads so he gets the little guy fucked up but its essential for leveling since pikachu still got exp from the fight. Disproportionate hp and defense training and you got yourself a moderately slow but able to take a hit pikachu. Elite four or championship cups are a different story though little fucker always got one shotted there.

Ash's Pikachu swallowed a light ball before Oak caught it and that light ball got supercharged in the first episode where it gets struck by lightning and zaps all those spearow. It was probably a TOP PERCENTAGE pikachu on top of that

Pikachu HAS to have perfect IVs though. There’s no way plot armor alone could allow it pull off so many feats.

Actually, if we're being technical, Pikachu took out way more Pokemon and put in far more work than Greninja did in the Kalos League and was such a hue threat that even Alan realized it and sent out Charizard to go ahead and take it out while it was weakened. And it was STILL fighting back hard, irritating and impressing him further.

The anime is a mess that isn't consistent at all. A lot gets retconned or disregard. It's been on line continues adventure for ash and his Pikachu but nothing ever seems to matter
