Rock+fighting, or either flying or dragon if you want to be boring. We have no non-legendary pokemon use that type combination, it fits since a gargoyle could easily be humanoid and they are said to fight and scare away evil spirits and demons.

Just making it dark flying would just make it a generic demon-like design. I really think a gargoyle must 100% be at least rock type.
90% of all existing rock types are either fossils, animals with shells, or a rocky mass with face/limbs. Any concept that slightly deviates from that should be used.

It's actually a great opportunity for a "substance" type to not be LITERALLY a hunk of said substance with googly eyes, and the stats of fucking Avalugg or Golem to match, and give out a nice, offensively balanced rock type.
