They are not strictly humans like you and me, they are not mammals like us and our mammals, they are literally a type of pokemon that evolved with a ridiculously high endurance (def and sp.def) just like we have the highest endurance in the entire animal kingdom, with about half a dozen regional variants (races) and no evolutionary stages. If you were born into the Pokemon world then yes you would be able to survive all the shit Ash and co go through canonically, but if a normal human from our world were to suddenly enter theirs they would likely perish within a week.
