Like every Pokémon game, it is up to the player how hard it is.
But unlike previous ones, making the game hard is not something that you need to artificially do. Just use multiple Pokémon to avoid overlevel since the game is not designed around having a designated team and it should be challenging

I went through with a flying team and it was pretty difficult at times. Ignoring trainers kept me easily under leveled and made the game pretty fun.

Yeah, I will admit Eri was actually surprisingly difficult, and probably the first difficult battle I have had in a new Pokemon title. Post game Nemona was much harder, and she was much more impressive having all level 85s with competitive movesets.
