Professor Simulator, terrible name, but it would be a game where you play as a newbie Pokemon Professor, straight out of college and starting up your first laboratory. You start the game with only one mon, and through doing tasks with them and learning more about them you unlock some kind of currency which can be used to upgrade and expand your lab. You can send NPC human characters out on research missions and they will catch and send random Pokemon to you, giving you more opportunities to research them and earn more currency, creating a cooler and cooler lab. And of course there would have to be at least one new Pokemon made for the game preferably a mythical that you can catch after creating the highest level most impressive lab ever.

In this game, you play and are NOT INTERESTED IN BATTLES. Instead it's all about exploring and pokemon contests. You learn moves to deal with obstacles in the wild and to do beautiful Pokémon pirouettes.
You compete to become a master Pokémon coordinator, but to do so you need to become well-traveled.
To get new Pokémon, you can either impress them with your cute attacks, give them gift or simply try to spend time with them and play.
It's all about eating, sleeping, running around, jumping, having fun and being cute in contests.

Well that's no fun.

Fine, a Pokémon village game not-unlike Animal Crossing or Story of Seasons. You pick a starter, Eevee or Pikachu to be village chief. Mew communicates to this Pokemon through dreams to build a village of harmony across as many Pokemon species as possible. The problem is the location is privy to rivaling "Boss" Pokemon so in addition to building your village where Pokemon outside this great island immigrate you also have a subgoal of making peace and unifying with neighboring villages. Eventually you grow and expand your village and once you bury the hatchet with the neighboring towns you gain access to things like more berries in the market and tourists from the other villages.

Mini games with a hub world like Diddy Kong racing but with a story mode. You could have different types of games with different types of mons. Races, shoot em ups, ball games, button mashers, whatever.
It's fun to play as pokemon, so they should find more ways to lean into that
