You don't HAVE to defeat the Wither and Ender Dragon for example, but they're among the few achievements measured in the game outside of building unless you're playing with extensive mods or plugins. Every block of a certain type of wood is the same, every diamond helmet with or without certain enchantments is the same, every world in vanilla plays the same once you have a supply chain secured. There are very rigid constants in Minecraft with very few variables that actually matter. Mods like the ones discussed in the thread can only do so much with what it offers because of how much is baked into it already.
