For getting better into Gundam, I suggest either watching the original Gundam TV anime or the original trilogy Gundam movie (which is a compilation of the TV anime). It sets up the basic formula of every Gundam. You probably got the gist of it from 00, but still.
After that, watching whatever you find interesting in whatever order you choose is probably fine. Unless you really need the Universal Century chronology. I suggest 08th MS Team and Gundam Thunderbolt (the movie compilation of the 4 episodes), but that's mostly 'cause their my favorites so far.
Besides Gundam though, definitely check out Gunbuster and Diebuster. Also by Gainax, also by Anno (Gunbuster, anyway). Hot-blooded action with giant robots, cute girls, and deadly aliens.

Patlabor (Start with 7-episode OVA, then the first two movies. There's also the 43-episode? TV series that you can watch)
There's also some hammy stuff that's great.
