There's huge chunks of land (thousands of acres) owned by the various military bases. The largest is part of Eglin AFB and much of it is accessible provided you have a range pass. They use it for testing and training and you can find lots of old military junk lying around. I've seen parts of old planes, dummy bombs, and once found a phosphorous flare connected to a trip wire.
There's great fresh/saltwater fishing (floundering was my favorite), hunting (especially small game), and lot's of places for 4 wheeling. The beaches are white the water is emerald green (it's called the emerald coast).
