it often enhances (or at worst, changes) the flavor and very often improves the texture if the cut of meat is too chewy (probably more common with cheaper steaks).
Granted I can appreciate the unique flavors of a good cut (like File Mignon) cooked not too much but that doesn't mean cooking it ruins it or necessarily makes it worse.
