It's small, the people up front managing checkout have no idea how much it could be priced (a decent chunk at a Whole Foods or QFC could range from $8-30), and while it's cut and prepped for you somewhere else in the store, they won't try and charge you for it on the spot like stores have their booze sections to deter thieves. Also people managing cheese shit usually are involved with other stuff in deli sections and are not helping out up front, so you're likely to avoid them while walking out in case your guilt gets to you.
