>>9112794>>9112843You can use the broth to cook the other stuff but the way we make it is we only soak the very bottom of the meat for the first phase and then elevate it above for the second half. I guess you could go the gordon ramsay way and just boil the entire thing with fennel and whatever he put in there but it didn't look like the fat melted much if at all and the outer layer barely had any crispiness to it. The way I'm used to it ends up inflated and super crispy like those crispy rind things you can get at the store but with the meat still really tender.
