Some dinosaurs would be more talkative than others, but their vocal cords would most likely had been like crocodilians, meaning most would hiss, grunt, and snap their jaws. We can't know for certain though, because soft tissues almost never fossilize. The sounds you hear dinosaurs make in Jurassic Park are actually mashups of sounds such as baby elephants, tiger roars, and if I remember correctly, turtle orgasms.
