to be fair i only watched the first video. second one seems alright too. another problem i noticed with this cooking the whole thing method, it seems that most of the meat isn't browned and it is in our method. this thing looks boiled on the inside. i think the ideal version would be some fusion of the two methods where you keep the epidermis on but cut it into slices. though i'm not sure. how crispy the skin would be if it's not facing upwards like it would be when the piece is whole. guess i have to experiment.
