This will give you a good starting point on researching his master: Saint Albertus Magnus. He has a lot to say about esoterism and he has a somewhat different approach to Theology in general.
Once you are don with that I would recommend you the works of Heinrich Kramer, Pico della Mirandola, Marsilio Ficino, Saint Bernardino of Siena and Nicholas Rémy. They will give you a good insight on the more esoteric side of Christianity while still being easily understandable.
