>>9441983oh well, you should definitely try the real thing with pecorino and guanciale then, at least once. it's different enough that it's like another recipe. pecorino is saltier and smellier than parmesan and guanciale has less of a smoky flavor than bacon. it's all very good. though like i said, i think the pecorino is the more important part. bacon is serviceable.
