COVID, the illness caused by the SARS-2 virus, is basically the same as the vaccine. The "spike" in the vaccine is the spike of the SARS-2 virus, the virus contains the genetic material that allows the spike protein (and the rest of the virus) to replicate. The vaccine contains the genetic material to translate into the spike protein, but if a vaccinated person sheds the spike protein, they theoretically aren't shedding the genetic material to make the spike, so you wouldn't start producing spike. They could shed antibodies against the spike which could be autoimmune, or they shed enough spike that you induce an [auto]immune response. You could just have gotten COVID, etc
