Fun fact: Most of the Italians that left for the USA were Southern Italians, but more importantly, they were not farmers, and had difficulties to keep their traditions since they were not self sufficient and had to mix in to survive. They ended up dropping their language so they would not be discriminated against, mixed up with Irish, other Americans and so on. Doing whatever they could to fit in in a harsh competitive and very urban environment.
In the other hand, you have the Italians that went to Brazil, mostly Northern Italians going to Southern Brazil. The main difference here is that since Brazil was so undeveloped and had so much free land that the Italians that went there were farmers, going with big families and creating "colonies" (best example of that would be the "serra gaúcha", therefore being able to maintain a lot of their culture, language and tradition but most importantly their blood lines. Plus they only had to cope with the German neighbors that came before them, also Farmers.
