idk that's just the way i've noticed it to be historically. even having a dish with a tiny bit of red sitting in front of me gives a headache, but we order from a chinese place with white in everything sometimes and i don't have issues if i just take out the chunks
sure it changes the taste but it solves the issue of needing an aromatic and usually still goes fine with the whole thing. if it's something where the flavor of garlic would ruin it then i use green instead and that's fine
