Well I personally don't till at all, so after the last harvest I just cut the stem of the plant as close to the soil as I can and leave the roots in the ground to decompose. I chop up the rest of the plant and throw it into my compost pile
I've heard claims that not tilling helps keep the network of tiny bugs and good fungi and whatnot healthy, and that leaving the roots in the soil helps your next plant root easier since it takes over the vacated root channels, but I've not seen a good scientific test showing anything conclusive so I'm not going to preach any of that stuff. I just go with it because it's easier and clearly isn't detrimental to the soil
