>if he hated them he would never help them or curse their enemiesThe thing is, the Canaanites were the enemies of Yahweh because they worshiped Hadad, who Yahweh wanted to attack or murder because Hadad killed Yam.
Yahweh was the one who wanted the Canaanites exterminated, so he goes and recruits the Hebrews. The Hebrews didn't care as much, the Canaanites were like their neighbors or cousins, so they ended up being tolerant and getting punished for this. (Numbers 25), every other time that the Hebrews start tolerating and performing Canaanite rituals. It's because the Hebrews hated the Canaanites much less than Yahweh did.
>Just look at how he gave them food, how he talked to them and gave them advice, there are many more examples.Yes, he is the God of War, he wants his people to be strong, healthy, hearty, and intelligent. He wants his people to win battles and conquer the Canaanites. God tries to win them over with his wisdom and offerings, but it was never enough to persuade the Hebrews to be loyal enough to uphold his commandments and exterminate the Canaanites.
>the social construction of race originates in medieval timesIt's not a "social construction of race", it has nothing to do with anything beyond phenotype. The Sky is blue like blue eyes, the clouds are White like fair skin. These are symbols of El, God of the Sky, even if this is completely inadvertent.
El is the father of Yam, Yahweh, and Mot, three gods which are disliked by those who worship Dagan and Hadad. This is why "attacking his symbolic people", the sky people, is thought of as a meaningful pursuit for the Canaanites.
If the Canaanites were to turn these sky people "brown like dirt", is a testament to the supremacy of Dagan over El. Dagan is a fertility God of crops, heavily involved with soil, and a patriarch who competes with El. Dagan is the father of Hadad, who kills Yam, son of El.
