When people buy into some extreme diet to a ritualistic extent, their belief and conviction that it will "heal" them often does. Especially if their initial symptoms were due to neurosis/psychosomatic.
There is a reason why placebo is one of the strongest and most documented effects in all of medicine, even materialistic-ass mainstream medicine has to admit that this is the case. Why do you think that for a lot of these people changes in diet reflect changes in life-attitude and philosophy, often including big life-changes too? They're using diets, sometimes extreme diets, as fetishes and rituals. It is closer to faith-healing that nutritional science.
