but fermented foods are very overhyped, theres a big study showing higher incidences of stomach cancers relating to the consumption of fermented foods. (miso, so1sauce, kimchi etc)
apanese get more stomach cancers, but less of other sorts. the high level of fermented food it seems, could also be the high salt intake but i say it is the fermentation.
