put 125g of self raising flour, 2tbsp or caster sugar and 1/2 teaspoon of baking powder into a large bowl
add a small mashed banana and a beaten egg
gradually whisk in 150ml of milk until the mixture resembles a smooth thick batter
stir in 50g of sultanas
heat a frying pan with a small amount of vegable oil
add dessert spoons full of the mixture to the pan
cook for 2 minutes until bubbles form on the top and the underside is golden
flip and cook for a further 1-2 minutes
serve with honey or maple syrup
