You can literally observe the sun moving below the horizon. I know flat earthers have developed copes for this, using some complicated light-refraction nonsense. But you cannot explain why we observe the sun moving through the sky at a constant rate. If the sun were moving linearly over the surface of the earth, it should speed up in the sky around midday, just as a car driving in a circle around you moves at a constant angular rate, but a car driving past you on a straight road will appear to approach slowly and then zip by quickly before trailing off into the distance.
