i think you've got it right with the idea that they really just don't need to find substitutes to these things. they could be engineered out of something else the same way you can substitute almond milk for milk, but that's not something you do because you can ONLY find almond milk. anywhere that's going to carry something that works as an oyster sauce substitute is also just going to carry oyster sauce. maybe i'm just a big bad american who overestimates how much more readily available this stuff is for me, but we literally have stuff like oyster sauce available in regular ass grocery stores here and i was under the impression that most places have at least one asian grocer even in the suburbs.

it does have a limit to how long it'll keep rice warm unattended without burning it and whatnot, but i've definitely put rice in the cookerr, hit the on button, and forgotten about it completely for about 4 hours only to have it borderline indistinguishable from rice that just got finished in a saucepan 30 seconds ago.
