Do the calculations. The Sun would never get anywhere near the horizon on a flat earth model. In fact it would be day light 24 hours a day no matter where you are on the planet.
And it has nothing to do with perspective, because if it was about perspective, you would see a flat earth sun stay 45 degrees above the horizon with the sun shrinking in size as it gets further away during the day.
