If you want to get into renfair stuff you should look into SCA (society of creative anachronism) or EMP (empire of medieval pursuits) or if you're a poorfag something like Dagorhir. They're "battle games" so in SCA/EMP you'll have the opportunity to build functional armor and learn functional skills while retaining some semblance of authenticity.
Have you given any thought into a brigandine? I mean if you're making a gambeson already you can use the same pattern to beef it up for "combat".
