For example, we assume the universe obeys laws and that those laws never change and have always been there, we assume that all the usual Axioms of mathematics are true, we assume that our senses aren't deceiving us about some properties of the outside world, we assume induction is valid. You can deny those postulates, lots of intellectuals have done so in the past. Conventional science assumes a bunch of stuff to be true so we can get past the complicated philosophical questions and go right to producing practical results.
