Also, serrated edges are no good in "cutting throats". You need a smooth razor edge to do that.
I recommend a bench grinder with large felt wheels and selected Menzerna polishing pastes for hardened steels to gain a true razor edge.
I am an avid amateur woodcarver. I lap my irons with aforementioned rig. I also shave my face with knives lapped with said rig (and with fatty marseille soap).
