To answer the question:
We have a wide variety of sausages that are mostly eaten as cold dish with bread and butter.
The gold standard however is the Frankonian Bratwurst. Roughly chopped pork stuffed into the guts of said animal may sound not that appealing, but it it's incredibly delicious. The taste is rounded up good with a bit majoram.
The Rostbratwurst can be eaten as a snack in a sandwich with mustard or horseradish as sauce, or as a full meal with sauerkraut and/or patatoe salad and/or bread with mustard or horseradish as sauce.
Some people like to eat the interior of the sausage raw on a bread with onions and spiced with dried paprika.
Another variation is called Saure Zipfel. For that dish you marinate the raw sausages in a mixture of vinegar, wine and other spices and then cook the sausages in the mixture. Saure Zipfel are often served at christmas eve.
