Rimworld is absolutely fantastic for colony simulation. Its full of countless hours of fun, especially with mods. It has great roleplay potential. Pretty much anyone can get into it, too. The downside is that its never on sale, and all the DLC cost as much as a the game itself... They are worth it, though.
Haven & Hearth is my personal favourite, and its even free. It's very realistic and detailed - the epitome of the survival genre. The game is also quaintly beautiful. Sadly it is distributed off-steam, so its criminally unknown by the larger public.
Minecraft is the gateway to survival games. Its simple but allows for many styles of play. Surprisingly, with certain mods such as TerraFirmaCraft or BetterThanWolves, it becomes a very rich survival experience definitely worth playing.
