If you do the low poly first you can very easily just add high poly detail on top of that once you have something that looks alright. The other way you have to either remodel or retopo with less polys.
I guess it's mostly a preference thing, but I tend to go low poly then layer edit poly modifiers to the stack for more detail so I can work non destructively.
